veggie egg bake

Baking is not necessarily my forte. Using the word forte isn’t either. I am however familiar with eggs. So here is my attempt at baking eggs in a ramekin while having it rise in a decent time amount of time. Sounds delicious, no?

This is an ideal brunch treat to warm the soul plus feel light to the stomach. All the ingredients were simple things that are highly likely to be in your fridge already.

THINGS NEEDED TO ACCOMPLISH THIS MEAL:

2 eggs per ramekin

–  handful of veggies  (I used carrots, mushrooms and asparagus)

– cheese (I used pepper jack cheese)

– pinch of salt and pepper

– pinch of baking soda

– 1/4 cup of water

– 1/2 tbsp of butter

OPTIONAL BUT A PLUS:

– any sort of bread crumbs

DIRECTIONS, if not obvious:

Preheat the oven to 425 degrees.

Put the eggs, diced up vegetables and cheese into a mixing bowl and stir.

Add the water and baking soda and also stir.

Pour the mixture into the buttered ramekin, put bread crumbs on top, cover it with foil and put in the oven.

Leave in the oven for a good 20 minutes. Then uncover the ramekin and bake for another 5 minutes.

After those 5 minutes, take it out of the oven and serve! I was very pleased with the results and would definitely make this again. TADAAA!
